Super bowl Lettuce wraps with Primal Kitchen

We teamed up with Primal Kitchen to create a delicious, healthy family recipe for your super bowl party this week! We first learned about Primal Kitchen when we did Whole 30 last spring. Primal Kitchen creates dressings, mayos, avocado oils that are all Whole 30 approved. (In a nut shell, if you haven't heard of Whole 30 before, it is essentially no sugar, no grains, no dairy for 30 days. You can read all about it here.)
First of all, the packaging from Primal Kitchen is adorable! However, more importantly their products taste incredible. Our whole family, even the kiddos loved everything we tasted. All of Primal Kitchens Dressing's are sugar free, dairy free, soy and canola oil free and don't compromise on taste.
We tried the Ranch, Greek and Honey Mustard Dressings made with Avocado Oil, Mayo and the Chipotle Lime Mayo (my favourite). There is a creaminess to the Ranch dressing and Mayo's which I love because it pulls salads and mixtures together nicely. The flavours are strong, yet not over powering and complement the food they accompany.
We created a delicious lunch or dinner meal with fresh avocado, grilled spiced shrimp, shredded carrots and purple cabbage, cashews, green onions and the Chipotle Lime Mayo all bundled up to make a beautiful lettuce wrap. You can check out the recipe at the end of our blog post.
This meal was so yummy and filling! We love being able to quickly whip up a salad and add a dressing that we know is made of pure goodness.
Ingredients:
Shrimp, cleaned, seasoned (with Cajun seasoning - recipe below) and cooked, cut into 1/2 inch cubes, Primal Kitchen Mayo, avocado, carrots, purple cabbage, green onions, cashews, Primal Kitchen Chipotle Lime Mayo, Primal Kitchen Avocado Oil.
Cajun Seasoning was from Whole30 Recipes:
1 Tbsp sea salt
1 Tbsp sweet paprika
2 tsp garlic powder
2 tsp onion powder
2 tsp coarse black pepper
1 tsp chipotle powder
1 tsp cayenne pepper
1 tsp thyme
1 tsp oregano
Directions:
1. Drizzle Avocado oil in a hot pan. Add shrimp, carrots to the pan. Light sear.
2. Once cooked, pour shrimp mixture into a mixing bowl. Add cabbage, cashews, green onions, avocado and a squeeze of lemon. Lightly mix.
3. Scoop shrimp mixture onto lettuce wrap. Drizzle Chipotle Lime Mayo on top. Bon Appetit!
